My secret: Get there early, around 7:15 p.m. You'll avoid the long lines and secure the best portions.
The perfect pairing: Don’t make the mistake of ordering carbonated drinks. Tortello calls for local wine. Ask for a red from the Colline Lucchesi or a Monteregio di Massa Marittima. If you’re at a seafood festival, a chilled Vermentino is the perfect match. Remember: in Maremma, food is a social ritual, so take your time, chat with your table neighbors, and enjoy the cool evening breeze under the pine trees.
